Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- In the US butter comes in sticks: 1 stick = ½ cup = 8 tablespoons = 113 g (4 oz), and a 1 lb box holds 4 sticks.
- The tablespoon marks on the wrapper are the easiest way to measure: cut at the line, no cup needed.
- Melted or solid, butter weighs the same — for “½ cup melted butter”, melt one stick.

Butter substitutes
For 1 cup (227 g, 2 sticks) of butter in muffins and quick breads, use ¾ cup (164 g) vegetable oil. Where a recipe creams butter with sugar, use a fat that stays solid.
Vegetable oil
¾ cup (164 g) vegetable oil
For muffins, quick breads, brownies and banana bread: recipes that melt the butter. The crumb comes out moister and more tender, with no butter taste. Not for cookies, pie crust or frosting.
Coconut oil
1 cup (218 g) solid coconut oil
For cookies, pie crust and crumbles. Use it soft but still solid: cold, it crumbles; warm, it melts. Refined coconut oil is neutral; virgin coconut oil tastes of coconut.
Margarine or plant butter
1 cup (227 g) stick margarine or plant-based butter
For everything, cookies and frosting included. Pick sticks with about 80% fat: tub spreads hold more water, and cookies spread flat.
Half applesauce
½ cup (113 g) butter + ½ cup (122 g) unsweetened applesauce
For muffins, quick breads and snack cakes. The cake comes out denser and less rich. Don't swap all of the butter, or the crumb turns gummy.
