Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Questions:

How many grams is a tablespoon?
A tablespoon holds 15 ml. That is 15 g of water, about 8 g of flour, 13 g of sugar, 14 g of butter and 21 g of honey.
How many grams is a teaspoon?
A teaspoon holds 5 ml: about 5 g of water, 4 g of sugar, 6 g of salt and 3 g of dry yeast.
Level or heaped?
All our numbers are for level spoons. A heaped spoon of flour or sugar holds about 1½–2 times as much as a level one — that is why some old tables show bigger numbers.
