Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Cornstarch (cornflour in the UK) thickens about twice as well as flour, so for gravy or pie filling use half as much: 1 tablespoon instead of 2 tablespoons of flour.
- Stir it into a little cold water first, then whisk the slurry into the hot liquid and let it bubble for a minute — it only thickens once it boils.
- No cake flour? Take 2 tablespoons out of each cup of all-purpose flour, add 2 tablespoons of cornstarch and sift them together twice.
