Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Recipes almost always mean packed brown sugar: press it into the cup until it holds its shape when turned out. Packed, a cup is about 220 g.
- Spooned loosely it weighs a lot less, so if a recipe just says “1 cup brown sugar”, pack it.
- Light and dark brown sugar weigh the same; dark simply has more molasses. Gone hard? Seal it overnight with a slice of bread and it softens.

Brown sugar substitutes
For 1 cup (220 g) of packed brown sugar, mix 1 cup (200 g) white sugar with 1 tbsp (21 g) molasses: brown sugar is white sugar with molasses, so that puts it back together.
White sugar and molasses
1 cup (200 g) white sugar + 1 tbsp (21 g) molasses
For anything that calls for light brown sugar; for dark, use 2 tbsp (42 g) molasses. Work the molasses into the sugar with a fork until no streaks are left; then it bakes like brown sugar.
White sugar
1 cup (200 g) + 1½ tbsp (19 g) white sugar
The same weight and sweetness, for cookies, cakes and sauces. Cookies come out crisper and paler, with less caramel taste.
Maple syrup
¾ cup (240 g) maple syrup
For muffins, quick breads, oatmeal and glazes. Use 2–3 tablespoons less of the other liquids and an oven 25 °F (15 °C) cooler. Cakes and muffins come out moister and taste of maple; not for crisp cookies.
Honey
¾ cup (255 g) honey
For muffins, quick breads and marinades. Use 2–3 tablespoons less of the other liquids and an oven 25 °F (15 °C) cooler: honey browns fast. Cakes and muffins come out moister and denser.
