Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Honey is heavy: a cup weighs about 340 g, almost one and a half times as much as water.
- Oil or wet the cup or spoon first and the honey slides right out — otherwise a good spoonful stays behind.
- To use honey instead of sugar: about ¾ cup of honey per cup of sugar, 2–3 tablespoons less of the other liquids, and an oven 15 °C (25 °F) cooler.

Honey substitutes
Maple syrup swaps for honey cup for cup: 1 cup (320 g) for 1 cup (340 g) of honey. Granulated sugar needs water to make up for the liquid in honey.
Maple syrup
1 cup (320 g) maple syrup
For baking, dressings, glazes and drizzling. It's thinner and a little less sweet, with a maple taste.
Agave syrup
1 cup (336 g) agave syrup
For drinks, dressings and baking. It tastes neutral and a little sweeter. It browns fast, so keep an eye on the oven.
Sugar and water
1¼ cups (250 g) granulated sugar + ¼ cup (59 g) water
For cakes, muffins and quick breads. There's no honey taste, and cakes come out a little drier and paler.
Light corn syrup
1 cup (328 g) light corn syrup
For granola bars, candy and glazes, where the honey is there to bind. It's less sweet, with no taste of its own.
