Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Use pure maple syrup for these numbers and for baking. Pancake syrup is mostly corn syrup with maple flavoring and doesn't taste or bake the same.
- US maple syrup is all Grade A, sorted by color: Golden, Amber, Dark and Very Dark. Darker syrup tastes stronger and keeps more of its maple flavor in baking.
- Once opened, keep pure maple syrup in the fridge: it has no preservatives and can grow mold at room temperature.
