Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Chips are made to hold their shape in the oven; chopped bar chocolate melts into pools and streaks instead. Both swap gram for gram, so choose by the look you want.
  • Hold back a small handful and press them onto the cookie dough balls just before baking — that's how bakery cookies get chips showing on top.
  • To melt chips, microwave them in 30-second bursts and stir each time. They keep their shape even when soft, so stir before deciding they need longer.
