Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Most kitchen scales count in 1 g steps, too coarse for a 2.6 g teaspoon of cinnamon. For spices, level measuring spoons are the more accurate tool.
- Most ground cinnamon on US shelves is cassia, strong and slightly spicy. Ceylon cinnamon is milder, so you may want a little more of it in a recipe written for cassia.
- For cinnamon sugar on toast or snickerdoodles, a common mix is 1 tablespoon of cinnamon to ¼ cup of sugar; add more sugar for a milder coating.
