Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • In the US powdered gelatin comes in ¼ oz (7 g) envelopes of about 2¼ teaspoons each, and one envelope sets 2 cups of liquid.
  • Bloom it before use: sprinkle it over cold water (about ¼ cup per envelope), wait a few minutes until spongy, then stir it into warm liquid until clear. Boiling weakens the set.
  • Fresh pineapple, kiwi and papaya stop gelatin from setting. Canned or cooked fruit is fine: the heat has already destroyed the enzyme.
