Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- Heavy (whipping) cream weighs about 238 g a cup — practically the same as water or milk.
- Whipped, it doubles: 1 cup of liquid cream gives about 2 cups of whipped cream.
- No heavy cream for a sauce or soup? Mix ¾ cup of milk with ¼ cup of melted butter. It won't whip, though.

Heavy cream substitutes
For 1 cup (238 g) of heavy cream in cooking and baking, the closest swap is ¾ cup (184 g) whole milk with ¼ cup (57 g) butter. To whip, use coconut cream.
Milk and butter
¾ cup (184 g) whole milk + ¼ cup (57 g) butter
For sauces, soups, mashed potatoes and cakes. Warm the milk, melt the butter in it and whisk well. The sauce comes out a little less rich, and it won't whip.
Half-and-half
1 cup (242 g) half-and-half
For coffee, soups, sauces and quiche. It can curdle at a hard boil or with acid, so keep sauces at a gentle simmer. For a richer sauce, whisk in 2 tbsp (28 g) melted butter.
Coconut cream
1 cup (240 g) full-fat coconut cream
For whipping, curries, soups and dairy-free desserts. It tastes of coconut. To whip it, chill the can overnight and scoop out only the thick cream on top.
Evaporated milk
1 cup (252 g) evaporated milk
For soups, sauces, casseroles and pumpkin pie. It's lighter, with a faint caramel taste, and holds up to simmering. It whips only when ice-cold, and the foam soon falls.
