Sour cream substitutes

Swap 1 cup (230 g) of sour cream for the same amount of plain full-fat Greek yogurt: tangier and a little lighter. For cooking, crème fraîche holds up best.

Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Every swap, with amounts

Greek yogurt

1 cup plain full-fat Greek yogurt

For dips, dressings, tacos and baking. It's tangier and a little lighter. Stir it into hot sauces off the heat, or it curdles.

Crème fraîche

1 cup crème fraîche

For sauces, soups and baking. It's richer and milder, and doesn't curdle when it simmers.

Heavy cream and lemon juice

1 cup (238 g) heavy cream + 1 tbsp (15 g) lemon juice

For sauces and cakes. Stir and let it stand 10 minutes: it thickens a little but stays pourable, too thin for dips. It's milder than sour cream.

Blended cottage cheese

1 cup cottage cheese + 1–2 tbsp milk or lemon juice, blended smooth

For dips, dressings and baked potatoes. It's lighter and less tangy; don't let it boil.

Questions:

How many grams in a cup of sour cream?
About 230 g in a US cup (240 ml), 243 g in a metric cup (250 ml) and 194 g in a 200 ml cup.
Why does another site give a different number?
Charts use different cups (240 ml, 250 ml or 200 ml) and different ways of filling them. Our numbers are for spooned and levelled cups (brown sugar packed, butter pressed in); scooping packs in more.
Should I weigh or use cups?
For baking, weigh — it's the only way to get the same result every time. For soups, rice or sauces, cups are close enough.
