Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Good to know:
- US single-serve cups hold 5.3 or 6 oz (150–170 g), which is a little over ½ to about ⅔ of a measuring cup.
- The liquid on top is whey: stir it back in before measuring, unless the recipe wants thick, drained yogurt.
- Greek yogurt swaps 1:1 for sour cream in dips and baking. For buttermilk, thin ¾ cup of plain yogurt with ¼ cup of milk.
