Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.
Every swap, with amounts
Tamari
1 tbsp (16 g) tamari
For anything: stir-fries, marinades, dipping sauces. It's richer and less sharp. Most tamari is gluten-free, but check the label.
Coconut aminos
1 tbsp (16 g) coconut aminos
For marinades, dressings and stir-fries without soy. It's sweeter and much less salty, so add a pinch of salt.
Miso and water
1 tbsp (17 g) miso stirred into 1 tbsp (15 g) water
For soups, glazes and stir-fries. It's made from soybeans, and barley miso has gluten, so it's not for a soy- or gluten-free diet. It tastes savory and slightly sweet, and looks cloudy rather than dark.

How to convert cups to grams:
- Pick the ingredient
each one has its own weight per cup.
- Type the amount
whole numbers, decimals or fractions like ½.
- Choose your cup
US, metric or 200 ml — then read off grams.
Questions:
- How many grams in a cup of soy sauce?
- About 255 g in a US cup (240 ml), 269 g in a metric cup (250 ml) and 216 g in a 200 ml cup.
- Why does another site give a different number?
- Charts use different cups (240 ml, 250 ml or 200 ml) and different ways of filling them. Our numbers are for spooned and levelled cups (brown sugar packed, butter pressed in); scooping packs in more.
- Should I weigh or use cups?
- For baking, weigh — it's the only way to get the same result every time. For soups, rice or sauces, cups are close enough.
