Dry ingredients are spooned into the cup and levelled. Scooped straight from the bag, flour can weigh up to 20% more — for baking, a scale is the safest bet.

Good to know:

  • Most US recipes use it by the tablespoon, so an opened can goes a long way: freeze leftovers in level tablespoons on a lined tray, then keep them in a bag.
  • Fry the paste in the oil for a minute or two, until it darkens to brick red, before adding liquid; the raw, sharp taste cooks off.
  • Paste in a tube is often double-concentrated and stronger than canned, so start with a little less and taste.
